``Rosso di Paltratico`` Red wine

Denomination: Rosso Toscano
Typical Geographical Indication
Grapes:100% Sangiovese

Vinification technique:
the grapes harvested at the time of their complete maturation, after de-stemming and crushing, are fermented with intense maceration for a period of 20-24 days.

Method and duration of refinement:
12 months aging in new durmast barrels, followed by 12 months of aging in bottles.

Organoleptic characteristics:
intense ruby ​​color, scent of berries in jam, with flavors of violet and rose petals. Rich as taste, soft and balanced, with well-melted tannins that lengthen the pleasant persistence. Long finish with notes of toasted hazelnuts, dried carobs and cigars.

``Bianco di Paltratico`` White wine

Denomination: Bianco Toscano
Typical Geographical Indication
Grapes:Trebbiano Siciliano, Malvasia and Colombana

Vinification technique:
the grapes harvested manually are softly pressed. The must after cold decanting ferments for 20-30 days at a temperature of 16-18 ° C in stainless steel tanks.

Method and duration of refinement:
6 month aging in stainless steel tanks.

Organoleptic characteristics:
straw-yellow color, fruity smell with hints of golden apple and banana. The taste is slightly acidulous and pleasantly fresh.

Passito di Paltratico - Raisin wine

Denomination: Passito Toscana
Typical Geographical Indication
Meditation wine made from traditional Colombian and Trebbiano grapes. Late and appropriate harvest. Light amber colour. Almond paste, honey and dried apricots aroma.

Extra virgin olive oil - EVO

The company has put again into production with energetic pruning the classic olive tree varieties of the area. The olives are manually harvested, directly from the plant and pressed within 24 hours.
Organoleptic characteristics: oil of a beautiful clear yellow colour with light green hues, has open  fragrances of good intensity fruity, accompanied by notes of fresh grass, artichokes and fresh rosemary. Final sensation of a light pleasant spicy.
